LIAISON CHAUDE

For hot dishes: 

  • Pour the purée into the boiling water, off the heat. 
  • Stir vigorously. 
  • The purée is ready to serve. 
LIAISON FROIDE

For cold dishes:

  • Pour the purée into the cold water, stirring vigorously with a whisk.
  • Let stand for 10 minutes.
  • Transfer to cooling cell (<5°C).
  • Reheat according to your process.
  • The purée is now ready to serve.
