Cold Micro-granulated Potato Purée

This micro-granulated purée is perfect for traditional potato-based preparations (aligot, duchesse potatoes), gratin dishes, shepherd’s pie, gnocchi, and as a substitute for breadcrumbs as a coating.

LIAISON FROIDE

For cold dishes: 

  • Sprinkle the micro-granulated purée into the cold water, stirring vigorously with a whisk 
  • Leave to stand for 10 minutes 
  • Store the prepared product in a cold room (<5°C) 
  • Adjust the product to meet your needs 
  • Transfer to a reheating cabinet to suit your process 
  • The purée is now ready to serve
