Yellow bell pepper

Juice of one lemon

bunch of flat-leaf parsley

bunch of fresh mint

Recipe

Place the Medium QC Couscous in a bowl and cover with cold water.

Leave to swell for ½ hour, occasionally lifting the seeds with a fork to aerate the couscous.

When the couscous has completely absorbed the water, sprinkle with lemon juice, season with salt and pepper, and mix with a fork.

Wash the tomatoes and yellow pepper, and peel the cucumber. Cut into small cubes. Peel and finely chop the onions.

Add it all to the couscous, drizzle with olive oil and mix.

Finally, finely chop the herbs with a knife and add to the salad, mixing well.

Adjust the seasoning if necessary and chill for at least 2 hours.
