Chicken and Pesto Panini

Preheat the panini maker.

Wash the cherry tomatoes, remove the stalks and cut into 2.

Cut each ball of mozzarella into 6 slices.
Finely chop the chicken breasts.

Wash the rocket.
Cut panini bread in half lengthwise.

Brush the inside with Pesto Verde sauce and arrange the rocket, cherry tomatoes, mozzarella and chicken on a slice.

Season with salt, pepper and olive oil.

Close the paninis with the other slice.
Cook the paninis for 6 to 8 minutes in the machine, pressing them down well, until the bread
is golden and the mozzarella melted. To be enjoyed piping hot.
