Yuzu and poppy seed Mufffins with raspberry

Soft raspberry-filled muffins for some touch of novelty

Preparation time : approximately 1 hour 20 minutes.

For 6 muffins of 150 g each.

Ingredients for the Raspberry melted heart

g of raspberries

Muffins preparation

Mix the dry ingredients on one side and the wet ingredients on the other. Then combine the two.

 

Do not overmix: a few fl our lumps will help the muffins stay moist.

 

Add the yuzu and the poppy seeds and blend.

Raspberry melted heart preparation

Boil the water and sugar. Add the syrup to the raspberries and put in a blender to blend. Strain the coulis through a sieve. Pour the coulis into an ice cube tray and freeze to set the melted hearts.

 

 

 

Divide the muffi n batter into paper muffi n cases and fi ll with 75 g of batter, then add the runny center to the center and top with 75 g of batter. Let stand for 30 minutes at room temperature.

 

Bake in a preheated oven at 200 °C (392°F) for 15 minutes.

 

Remove from the mold when cold.
