

Durum wheat butter biscuits

In the bowl of a mixer with a whisk, pour the liquids (including softened butter) then the powders and beat for 4 minutes on low speed, then 5 minutes on high speed.
Divide the dough in half and roll it out using the threaded rods as a guide.
Cut out the desired shape using a cookie cutter.
Let the dough rest for 30 minutes at 4 °C (39°F).
Glaze the biscuits before baking with a glaze made of 33 % water and 67 % egg.
Bake for 18 minutes at 170 °C (338°F), rotating the baking sheets halfway through baking.
