Japanese style wrap

Ingredients for the wrap

Ingredients for the filling (for 1 wrap)

g of raw tuna

Preparation

Kneading

Knead with the spiral for 4 minutes on low speed and 8 minutes on high speed. Dough temperature: 22-24°C (72-75°F).

Resting in bulk

1 hour at 25°C (77°F).

Division

Divide into 200g pieces of dough.

Proofing

5 minutes.

Shaping

Roll down gradually using a rolling mill until a target thickness of 1mm is reached.
Cut out using a 24cm (8.5 in) cutter.

Baking (frying pan)

1 minutes per side.

Assembly 

Mix the cream cheese with the wasabi. Slice the tuna into strips.
Spread the wraps with the wasabi cream, top with the tuna, sprinkle with sesame seeds, and add a few lettuce leaves. Roll tightly.
For a more intense flavor, marinate the raw tuna in soy sauce beforehand.
