Kneading

Knead with a hook of your robot 6 minutes all the ingredient on medium speed.
Dough temperature: 24 to 26°C.

Resting in bulk

30 minutes at 25°C.

Division

Divide your dough into 8 equal parts of about 200 g.

Shaping

Shape by hand into 20*10 cm shuttles.

Proofing

10 minutes at 25°C.

Baking (ventilated oven)

Preheat your oven to 230°C. Moisten the breads with water and bake for about 6 minutes.

Assembly

Spread the cream cheese, then arrange the coleslaw, sliced tomatoes, falafels, and lettuce.

Close the pita.
