Durum Wheat Pizza

A pizza as if you were in Italy!

Preparation

Kneading 

Knead all dough ingredients for 4 minutes on low speed, then 8 minutes on medium speed.
Dough temperature: 22 to 23°C.

Rising time (in the oven) 

30 minutes at 25°C.

Cutting 

Divide into 4 pieces, approximately 250g each.

Resting 

5 minutes.

Flouring 

Use durum wheat flour

Rolling 

Spread durum wheat flour on your work surface.
Flatten each dough ball by hand or with a rolling pin into a circle about 24-28 cm in diameter and 5-8 mm thick.

Shaping 

On a flat, floured surface, top each piece of dough with 70 g pizza sauce, 30 g grated Emmental cheese and a few olives.

Baking (pizza oven) 

Preheat your pizza oven to 320°.
Cook for about a minute and a half.
Add a few basil leaves and halved cherry tomatoes.
