Durum wheat milk buns

Ideal for breakfast or as a snack.

Preparation

Kneading 

Using a spiral mixer, knead all the ingredients for 4 minutes at low speed, then 13 minutes at medium speed.
Dough temperature: 23 – 25°C.

Rising time 

15 minutes at room temperature.

Dividing – Forming 

Shape the dough into 40g navettes.

Resting 

20 minutes at room temperature

Shaping 

By hand 8-10 cm.
Score the milk buns with two cuts on the top to link the sections together.

Proving 

Approx. 1 hr 30 mins -1 hr 40 mins at 28°C.

Baking (bottom-heat oven) 

Wash with egg.
Bake for 12 minutes at 180°C (bottom heat) and 200°C (top heat).
